What is Chantélice?

Chantélice is a powdered cream base that transforms into a whipped cream-style filling. It is perfect for:

  • Frosting cakes
  • Filling sponge layers and rolls
  • Decorating cupcakes and pastries
  • Tarts and desserts
  • Gelato (adds creaminess and volume)
  • Stabilising fresh cream

How to Prepare

Ingredients Required

  • 200–250g Chantélice (depending on the desired firmness)
  • 200g cold water and 200g cold milk

Alternative options:

  • 400g cold milk only (for a richer, creamier result)
  • 400g cold water only (for a lighter texture and longer shelf life)

Method:

  1. Pour the powder into a bowl with cold water and cold milk.
  2. Mix manually with a whisk to hydrate the powder.
  3. Whip with an electric mixer on high speed for 2–3 minutes until soft, fluffy peaks form.

For a richer taste, use only milk. For a lighter version with longer shelf life, use water.

Storage & Shelf Life

  • Lasts 4–5 days in the fridge if prepared with water
  • 2–3 days if prepared with milk
  • Can be frozen and restored by stirring
  • Store unopened in a cool, dry place

After opening, seal in an airtight bag away from heat and light

Sugar, dehydrated glucose syrup, palm kernel fat, emulsifiers: E471, E472a; MILK proteins, corn starch, thickener: E401; stabiliser: E340; anti-caking agent: E341.

Allergens: MILK

Possible cross contaminations: Eggs, peanuts, soy, nuts: ALMONDS, HAZELNUTS, PISTACHIO.

Storage precautions: Store the powdered product in its original packaging, in a cool, dry place, away from direct sunlight and heat sources. Once prepared, the cream should be kept in the fridge for a few days. Stir well before use.
