One of the most common challenges when making different flavours, especially those based on citruses, is heat stability. Saracino flavours therefore have been developed for a bake safe consistent flavour. High concentrate food flavouring is perfect for cakes, ganache, macarons, cupcakes, sponges, Ice-creams, yogurt.
User Instruction:
- 100/120g of paste for litre of basis mix
- 35/50g per litre for use as reinforcement to the fruit
- 100g of flavouring paste per litre of fresh cream or milk for Ice cream, frozen yogurt, mousse, panna cotta
- 120g per kg of mixture of products in the case of cakes
How to use:
- Stir before use
- Cakes – mix into batter to flavour your sponge
- Creams, icings & chocolate – mix in well to flavour
- Ice-cream, yogurt, gateaux & jellies – Either mix in or pour over
- Can be enjoyed poured over neat or stirred in to any sweet treats
- Use as a jam as well as a flavouring for amazing tasting cakes
- Can also be mixed with Saracino Pasta Cover fondant to achieve a flavour
INGREDIENTS:
Passion Fruit: Glucose syrup, sucrose, water, thickeners: agar agar E406, pectin E440, modified starch E1422; acidit regulators: citric acid E330, sodium citrate E331; flavour, preservative: potassium sorbate E202; colour: beta- carotene E160a.
Chocolate and hazelnuts: HAZELNUTS (37%), sugar, dextrose, lean cocoa powder (15%), PEANUTS oil, emulsifier: SOY lecithin; flavours.
Caramel: Glucose syrup, sugar, water, shea oil, caramel (7%), skimmed MILK powder, acid: E330; thickeners: E406, E440; flavour, colour: E100.
Coffee: Glucose syrup, sugar, water, freeze-dried coffee (10%), colour: E150a; flavour, modified starch, preservative: E202.
Hazelnuts Extra: 100% HAZELNUTS. Dosing: 100/120 grams of paste for litre of basis mix.
Pistachio : PISTACHIO NUTS (>99%), colour: E141. Dosing: 100/120 grams of flavouring paste for 1 litre of base mix. How to use: For ice cream, parfait, mousses and bavarian cream mix 100 g of paste in 1 liter of cream or milk. For cakes, mix 100/120 g of paste in 1 kg of dough.
Tiramisu: Marsala wine, sugar, EGG yolk and EGGS, flavours, coffee, HAZELNUTS, PEANUT oil.
Vanilla: Sugar, glucose syrup, water, dextrose, flavor, exhausted ground vanilla beans (0,3%), thickener: agar agar E406; acidifier: citric acid E330; colors: betacarotene E160a, riboflavin E101.
Zabaione (eggnog): Marsala wine (SULFITES) (34%), sugar, EGG yolk (22%), alcohol, maltodextrin, flavours, thickener: agar-agar E406, colour: carotenoid E160a(i).
Coconut: Glucose syrup, coconut flakes (17%), sugar, water, flavour, modified starch, acidity regulators: E330.
Lemon: Glucose syrup, sugar, lemon juice (20%), water, thickeners: E406, E440, E1422; flavour.
Mango: Glucose syrup, mango pulp (30%), sugar, acid: citric acid E330; water, thickeners: pectin E440, agar agar E406; flavour, colours: curcumin E100, beta-carotene E160a.
Raspberry: Raspberries puree (32%), glucose syrup, sugar, flavor, acid: citric acid E330; thickeners: pectin E440, agar agar E406; colour: black carrot extract.
Strawberry: Glucose syrup, strawberry puree 30%, sugar, flavour, acid: E330; thickeners: pectin E440, agar agar E406; colours: beta-carotene E160a, black carrot extract.
Wild Fruits: Fruit juice and pulp in variable proportion 32% (strawberries, raspberries, blueberries), glucose syrup, sugar, acid: E330; thickeners: E440, E406; flavour, colour: black carrot extract.
