POWDER GELATIN – thickening agent

  • 1 pot of 100g of powder gelatin is equivalent  to 8 gelatin leaves. Use 20g of gelatin for 1 litre.


Animal based gelatin.  It can be used as a thickening agent for Baveroise, mousse, fresh cream, Panna Cotta etc.

Things to remember: Salts and acids decrease gelatin thickening power, whilst milk and sugars increase it.

Allergens: May contain traces of eggs, milk, soy and nuts.
